Teil 2/3:

Zwei Dinge sind mir wichtig, der Geschmack und die Bedienung. Die Bedienung muss „zugedeckt mit Liebe sein“ und nicht einfach nur „Ja ich will Geld verdienen“. Meine Soße schmeckt auch anders, denn ich mach die für mich. 

Auch die Falafel, für die Leute ist das wie ein Schock, die haben immer Falafel gegessen und denken „Ok, ich komm mal rein und probier das.“ Wirklich, wie ein Schock! Ich guck denen ins Gesicht und einer hat nur gesagt „Hä?! Das ist Falafel? Das ist genial, mach eine Facebookseite, das ist nicht normal!“

Die Konkurrenz hier ist halt groß und ich hab mir gesagt, da musst du was besonderes machen. Ich hab gesagt: Dürumbrot, selber machen! Ohne Zusatzstoffe. Und dann die Falafel.Da mach ich mir aber keine Sorgen, den Hummus machen wir ja auch selber. Und dann die Spezialsoße! Ein türkischer Freund sagt, er steht Nachts immer am Kühlschrank und nascht und dann nochmal und nochmal! Du hörst da nicht auf.

Part 2/3:

Two things are important to me, the taste and the service. The service has to be „covered with love“, and not just „yes, I want to earn money“. My sauce also tastes different, because I am making it for me.

As well as the falafel; for the guests it is like a shock, they have always been eating falafel and then they think „Ok, I am going in there and try it.” Really, like a shock! I looked into their faces, and of them just said „Huh? This is falafel? This is genius, build a facebook pace, this is not normal!“

There is a lot of competition and that is why I told myself to do something special. I said: kebab bread, homemade! Without additives. The same goes for the falafel. But I am not worried about this one, since we also make the hummus from scratch. And then there is the special sauce! A Turkish friend of mine says he is always standing in front of the fridge at night to nibble on it, again and again. You just can’t stop.
